The Wall Street Journal just posted a great article & video about a new research article published in the journal BMC. I’m glad to see some validation for those of us who cannot eat gluten, but have been told we do not have celiac disease. In the coming years, as more people study this epidemic, I believe our understanding of celiac disease & gluten intolerance will redefine itself. There’s so much we still do not know or understand, esp. when dealing with foods, such as wheat, that have been radically changed over the last 150 years or so.
